George Ellis Doty attended the Utah State Agricultural College before serving as a mission for the Church of Jesus Christ of Latter-day Saints. He graduated from Brigham Young University and attended medical school at Northwestern University. Elizabeth S. Doty earned her RN from the University of Minnesota and worked at Minneapolis General Hospital, where she met Dr. George.

George served as a flight surgeon in the U.S. Navy during World War II, attaining the rank of commander. After the war, he practiced as a physician-surgeon in North Hollywood, California for 40 years. In 1975, Dr. Doty retired from his medical practice to serve with his wife as a medical missionary in Guatemala.
